
I got this recipe from fellow YouTuber Phyllis Stokes! Y'all check out her channel! That lady can cook! I tweaked a few things to make it vegetarian, but it's her recipe! WARNING! This cobbler is pure decadence! The MANGO FLAVOR IS INTENSELY DELICIOUS!!!!!! You may be tempted to make more than one! While it is really good, I kept it vegetarian; instead of milk I used, Almond Milk; instead of a egg, I used a banana, which gave the cake an amazing taste and texture. The recipe is below: I hope that you have a chance to make this and see how decadent this is, for yourself! I tweaked a few things to make it a vegetarian treat: 1) Instead of cows milk, I used Vanilla Almond Milk 2) Instead of butter, I used Coconut oil 3) Instead of eggs, I whipped a banana in the food processor (you can also just use a cup and a fork, if you don't have a food processor. Save a few of the mangoes and juice them to cook with the mangoes. Also squeeze in the juice of 3 or 4 clementine oranges. PRE-HEAT the oven to 350 degrees and cook the cobbler for 45 minutes or until golden brown and/or batter is done. INGREDIENTS: CREAM TOGETHER with a whisk by hand/blender/food processor (whatever you have) 1 cup of sugar 3 teaspoons of whipped banana 1 teaspoons of vanilla extract Then mix in: 1 1/2 cups of Vanilla Almond Milk 1/4 cup coconut water (fresh from the coconut is best, or buy some from the carton) I will show you here, how to open a coconut to get your coconut water: Mix all of this together and then..... 2 cups of self rising flour (incorporate one cup at a time) OR.... for a healthier recipe, grind 2 cups of OLD FASHIONED OATMEAL into a flour ;) 3/4 cups of coconut oil i also oil a 9 x13 Pyrex pan and coat the entire glass pan Add the fruit Add the batter lift a few pieces of fruit to the top of the batter, as desired, but do not stir PRE-HEAT the oven to 350 degrees and cook for 45 minutes or until golden brown and batter is done.
