
Lemon & Purple Sweet Potato Brownies - RECIPE: ICING - Preheat oven to 400 degrees farenheit. Wash 3 small Okinawan Purple Sweet Potatoes - Bake at 400 degrees farenheit for 55 minutes, let cool completely. Once they have cooled, peel and put into food processor/blender and and 4 to 6 ounces of milk. Add a small amount, at a time and adjust the amount based on how thin or thick you would like your icing. Blend until smooth, thick and creamy. It should be the consistency of a cake icing. LEMON BROWNIE - Pre-heat oven to 350 degrees farenheit. Cream together 1 banana, 1 cup of sugar. Then add 1/2 cup of Almond/Coconut milk, 1 1/2 teaspoon of Lemon Extract, 6 tablespoons of Olive Oil, 2 Cups of Self Rising Flour TO BAKE - Bake in an 8x8 pan for 20 - 25 minutes or until done. Insert a WARM knife. If knife comes out clean, the brownie is ready. If batter comes out on knife, your brownie may need to bake an additional 5 to 8 minutes. Cook times can vary from oven to oven. Elevations also have an impact upon baking time, as well. Let brownie cool completely and then ice with the Okinawan Sweet Potato and Almond/Coconut milk icing. Garnish with strawberries or your favorite fruit and a small amount of lemon zest. Serve with ice cold lemon water (no sugar) or sweetened lemonade!
