
The recipe calls for 1 cup of sugar for every cup of Ginger. I had 2 cups of ginger. Two cups of sugar would have been overkill and really a waste. I had almost, not quite, a cup of sugar and about 2 cups of water. I will probably use a 1/2 cup of sugar next time. I know the sugar is to help turn the liquid into a syrup, but I think the 1/2 cup of sugar will be sufficient.
