*FOR THE MINI PURPLE SWEET POTATO PUDDING CRUSTS* Sweetened shredded coconut - toasted Pecans - toasted Toast the coconut and pecans in the oven on 350 until the coconut turns a gold brown. You must watch it! Don't let it burn! White raisins *TO MAKE THE PUDDING* OKINAWAN PURPLE SWEET POTATOES (please try to use only this type) They are the best and the sweetest! They should look like the ones in the video. They can be found at your Asian markets. A small amount of already sweetened coconut milk - just enough to get it to mix. These sweet potatoes are very dense and very sweet. Just by mixing the milk and purple sweet potato is enough to make your pudding. There is no need for thickeners, corn starch, etc. I froze mine for about 30 minute, but that's up to you. Just a few ingredients and so quick and easy to make! Do not add sugar to the sweet potatoes. They are already VERY, VERY, VERY SWEET! In the next video, I will show you how I made the Collard Green Soup/Smoothie! I think it's better to add other savory vegetables, herbs and spices to season your green smoothies, rather than adding fruits and sweeteners to make your green smoothies taste good. DO NOT add a drop of sugar, to the purple sweet potato. It will be inedible, as it will be too sweet! After having that tooth extracted, I was put on a soft diet. I have no usable, opposable teeth on either side. I've tried chewing using the roof of my mouth and tongue only to feel sick afterwards. I have to wait a month for complete healing in order to get my implants put in, so I've got to make soft foods for the next 30 days. I'm not worried about making soft foods that will be palatable and will taste great and will meet my nutritional needs!
